Ruth M. Emerson Library

There has been a research library associated with AIB International since the earliest years of the Institute. The building of The Wahl-Henius Institute, an internationally known brewing school was purchased in 1922. As part of the purchase agreement, Mr. Heines maintained an office in the building, and the library collection remained his property and used as a resource to both his work and of AIB staff.

In 1925, the Library of Fermentology was purchased by Julian and Milton Livingston and donated to the American Institute of Baking in memory of their father, Louis Livingston, a well-known Chicago commercial baker. The Livington family continued to support the library as a memorial to Mr. Livigston, when AIB moved to the building on Ontario Street in 1950.

By the time AIB moved to Manhattan Kansas, from Chicago in 1978, the original Louis Livingston Library had become only part of the world-class collection of specialized materials on bakery science and technology. Ruth Emerson, who had been librarian since 1947, was one of a handful of institute staff who made the move to Manhattan. In 1984, Ms. Emerson retired from her position as Librarian after 37 years of service.

In honor of her years of service the library was renamed after her upon her retirement. Emerson's amazing card file indexes have evolved into the electronic data base system in current use, providing information that is unparalleled in food industry resource centers today.
