Library and Museum

The Ruth M. Emerson Library is a unique library that specializes in the baking and food industries. The library and museum collection of scientific and trade materials has grown to include over 9,500 items, with over 450 journal titles available in Chinese, Japanese, Italian, Portuguese, Spanish, German, French and Dutch. Library staff maintains the Emerson database of more than 75,000 abstracted articles from baking, cereal science and food related publications.

In 1982, Harold Freund donated his private collection of bakery figurines and funds to establish a museum for the collection and preservation of the history of baking in America. In 1998, the museum was renamed the Harold M. Freund Museum of Baking in honor of Mr. Freund.
