Compliance is an imperative element of the food industry, yet decoding and implementing regulations often poses challenges. Our practical instruction takes you step-by-step through developing your own HACCP program and putting it to work in your facility. Once you’ve completed the course, you’ll be able to comply with regulated, internal, and customer food safety requirements with a well-managed food safety program.

AIB’s HACCP Workshop is based on the 12 steps of Codex and is easy to understand and apply to your own food plant. It’s a great foundation for any GFSI-benchmarked certification audit.

Who will benefit from this workshop?

This program is perfect for all members of a HACCP team, as well as members of senior management, personnel responsible for reviewing and auditing supplier's HACCP programs, and anyone who needs a basic understanding of FSMA's preventive controls program.

After this seminar you’ll know how to:

  • Apply the 12 steps of Codex in order to create a HACCP Plan
  • Compile a HACCP Manual
  • Manage food safety deviations and program failures
  • Establish a validation component to a HACCP program

Upon successful completion of this course you will receive 1.3 IACET continuing education units.

A study of the origins of HACCP and HACCP's place in US food regulations
9:30 a.m. Hazards: Biological, Chemical, and Physical
An explanation of food safety hazards with an understanding of the difference between inherent hazards and those due to negligence. Exploration of appropriate control measures for various hazards
11:00 a.m. Prerequisite Programs
A review of key prerequisite programs and their role in HACCP
12:00 p.m. Lunch (On your own)
1:00 p.m. HACCP Workshop
A step-by-step workshop following the 12 steps of Codex. Seminar participants will work in teams to develop a model HACCP Plan with the guidance of AIB experts.
